stand and constantly stir and stir and stir....

with a wooden spoon only....

using only hot stock....a half a cup at a time....

only clockwise 23 times and then three times counter and then clockwise again...

only standing on your left foot...

please...

risotto will come out lovely and delightful and creamy and all'onda...without having to do it any specific..."this is the only way to do it!"...type of way. i mean jeesy creesy...do you all pee standing up? Its not the only way to do it...

you can stir with a spatula....it will be creamy

you can use cold stock...it will be tasty...

you can let it sit and not stir it for a while...and then stir it and guess what?...it will still be creamy...

you shouldn't have to mount a pound of butter or creme fraiche or mascarpone in it at the end to make it creamy...or glossy...or nice.

risotto...its about the rice...and the stock...and THE STARCH!
