Its summer. Its hot! People are eating later. If they are going out at all after the holiday weekend.
We had the slowest night I have had at the bbq joint. After one of the busiest Friday nights. We go from 208 covers to 40+. Ouch...so what do you do?
Cut labor and send some peeps home! Its deep clean night, as it is every Monday, and so that means more work and more grumbling for the rest of the peeps.
Prep up! You can only prep so much for the upcoming week if you think it might continue to be slow.
Play games!
