"Sometimes i am approached by people and they want to talk about food or some technique that they saw on t.v. and sometimes i pretend like i am the dishwasher and they leave me alone. A problem that is becoming all too common is that of the chef that takes him or herself too seriously, we are just fucking cooks and we always said that if we could do nothing else but line cook and make enough to get by, then that is what we would do. Ultimately even after the media portrays us as something else the reason that we do what we do is not because we want to be on the food network, the reason is we like being the underdogs, we like to point out that everyone else’s approach to life could very well be backward, we like the stress and we like to laugh at ourselves, drink, fight, create, destroy and hopefully give back. The more i think about it, the more i think that i might not or ever want to be more than a line cook that happens to be the owner of the restaurant."
